Ingredients:

2 tsp Sunflower Oil

2 Very Ripe Bananas

200g Medjool Dates

1.5 tsp Cardamom Masala | If you don't have our masala, please use 1/2 tsp ground cinnamon & 1/2 tsp ground cardamom

100g Walnuts or Pecans

100g Caster Sugar

2 tbsp runny honey

200g Unsalted Butter

2 Eggs

125g Plain flour

1.5 tsp Baking Powder

1/4 tsp Salt

Instructions:

  1. Preheat the oven to 170°C. Line a 24cm round cake tin with parchment paper and brush with oil.
  2. De-seed the dates and cut into 6 pieces. Mash the bananas with a fork and set aside.
  3. Put the walnuts or pecans in a food processor and roughly blitz. Set aside.
  4. Put the sugar and honey into a large bowl and beat with the butter until smooth. Slowly add the eggs, ground nuts, flour, baking powder, masala/spices, oil and salt, and continue to mix using an electric mixer. Add the banana and 3/4 of the dates and mix until smooth. Pour the batter into the cake tin and arrange the remaining dates on top. Bake for 70-80 minutes. Cover with foil after 30 minutes of baking.
  5. Remove from the oven and set aside to cool.
